ingredients
1kg beef mince
1 tbs minced garlic
2 tbs fresh minced ginger
1 tsp fish sauce
3 tbs coconut aminos (soy sauce/tamari)
cooked rice to serve
SALAD: 1/2 small head red cabbage, finely shredded
2 small carrots, finely sliced
1 large cucumber, finely sliced
1 red capsicum, finely sliced
100g bean sprouts
coriander- you measure that with you soul
1 cup loosely packed mint
DRESSING:
1/4 cup lime juice
1 tbs honey or maple syrup
1 tbs sesame oil
1 tbs coconut aminos (or tamari or soy sauce)
1/4 cup rice wine vinegar
good pinch salt
optional1 tsp natural bone broth concentrate

method
mix all the salad ingredients into a large bowl and set aside. pop all the dressing ingredients into a jar and shake well to combine.
in a large frying pan heat a little olive oil over medium heat, add garlic and ginger and sauté until fragrant. add the beef mince and brown. now add fish sauce and coconut aminos and reduce heat. simmer over a low heat for approximately 5 mins until most of the liquid has been absorbed.
dress and toss your salad then add rice, salad & mince to your bowls. top with extra coriander and crushed peanuts to serve.
