50g baby spinach
150g goats cheese
1/2 cup parsley
1/4 cup mint
1/8 cup rosemary
2 tsp salt
approx 2kg boned, rolled lamb
optional1 tsp natural bone broth concentrate

method
preheat oven to 180c. blend together goats cheese, herbs, spinach & salt until a thick paste forms. remove the string from the lamb and lay it flat on a board, fat side down (i kept the string to re-tie after stuffing). press the herb paste all over the inside layer then re-roll and tie tightly. place into a baking dish and cover. bake for 1.5 hrs covered then remove cover and bake for 15 more minutes. remove from oven and allow to rest covered for 15 mins before slicing.
