serves: 4 cooking time: 9 hours (slow and steady)
ingredients
1 onion, sliced
1.2-1.5kg chuck, roughly cubed
1 tbs crushed garlic
1 tbs fresh grated ginger (I used a microplane)
1 red chilli, finely diced (remove seeds if you want it mild)
1 cup coconut cream
1 cup beef stock or broth
4 tbs peanut butter
2 tbs maple syrup or coconut sugar
2 tbs tamari/soy sauce
OPTIONAL- 2 tsp tamarind paste
method
brown the beef then set aside.
add all other ingredients to your crockpot or slow cooker and mix well.
add the beef back in and stir to combine.
if using a crockpot, place in the oven with the lid on at 150C for 2hrs then remove lid and cook for another hour with the lid off.
if using a slow cooker, turn to low and cook for 6 hrs.
serve with rice or rice noodles, fresh coriander, chopped peanuts and stir-fry greens. recipe by @myfoodreligion
